I need to get some video off my dvr or tv to my computer for editing. What is the best way to do that?

You'll be wanting an I/O box. However if it's a one time use they're pretty pricey you may want to find another way.

A lot of places rent AJA IO's due to their DIT usage so it could be your best bet:

I'm not sure if they still make them but you also use to be able to get VIVO (video in video out) graphics cards. However, I have not seen one since the AGP days.

I use the AV input for audio and Svid input for picture through my DV camcorder to do this. Capture as clip through the firewire to Premiere or tape it to DV for archive.
A capture device with YUV component input will give the best quality if it is HD material. HDMI usually won't let you record if the program is protected.

Do any of you know about this? I've heard that this with the combination of the EYE TV software from Elegato

I prefer to keep it in h.264 and i'll be editing in FCP. I do a little video work for ESPN.com and I have to record football games then upload highlights so i'm trying to find the quickest way. I assume i'll have to convert files to quicktime but I don't mind doing that.

I really need to preserve HD quality as well.

Those are designed much more for converting for web and iPod than for professional-level work. I'd at least go with the entry-level Blackmagic gear over the Elgato.
